Starting in Hamburg, we want to travel around, including Amsterdam and Vienna for sure, the rest is quite open.

I purchased Eurail passes last fall for a trip that I took to Italy. There are options to purchase a pass for only one region, one country (or a few) countries, or to purchase a more inclusive pass which allows you to travel around most of Europe. We went with the flexible pass for just Italy, which meant that we paid a little less money and had to validate our tickets at each station.
The websites selling the passes may seem as though they leave a little information to be desired, but I found that the booklets that came with the passes themselves in the mail, were extremely helpful. They outline when you will need to purchase supplemental tickets (such as overnight sleeper tickets or tickets on certain inter-city lines) and also include a thorough time schedule for rail lines all over Europe.
I found the pass to be completely worth it. We spent about 2 weeks traveling, from Pisa south to Bari, stopping at several cities along the way, and then back North, and we would definitely travel with the passes again.

Europe is way past us in Rail Service, the ICE train and the TGV, you can travel from Rome to Venice in 4.5 hours. Extremely dependable
