The countries that are covered depends on the pass that you buy. There are passes good in single countries, various combinations of countries, or a global pass that can be used in all 21 countries that accept the pass. http://www.eurail.com/ Within the limits of your pass, you can go anywhere the train system goes.
You need to be aware that for the faster trains and night trains, you will still have to pay an additional reservation/supplement fee. http://www.eurail.com/1_reservations_sup鈥?/a> , http://www.eurail.com/1_reservations_sup鈥?/a> . It is often cheaper to just buy individual tickets from the national train systems. The pass is best if you do a LOT of train travel, rely mostly on the slower regional trains, and/or are travelling on the spur of the moment. There are often discounted individual tickets if you buy far enough in advance, but this would mean having a specific schedule to adhere to.
