Here in Brazil the amount and meat variety offered is larger than the healthy offered there in U.S.A.
Among the a lot of varieties beef , pig, chicken, we can also eat meat of alligator and capybara. The salads and cold plates also have a very larger variety because we have a variety of green vegetables and fruits that you don't have there in U.S.A.
To eat in a steakhous here in Rio de Janeiro costs USD 22,00 per person.
In short it is a sin to eat at a Brazilian steakhouse, we have to leave the Bible out and after eating to ask pardon to God for committing the sin of the gluttony.

In S.A. they do not have the same "map" of a beef quarter etc as the US...well they could but don't...
You just buy meat and are supposed to know what to do with it. I loved it because when given the choice - I chose the TENDERLOIN (YAY!) which was the same price. But of course, as many Americans don't know. if I was going to make chili or stew that was not what I needed or wanted. At first, I bought it because I thought it was better...Well it costs more here - so I figured it was the good stuff. Not so - if you are a cook. You soon learn down there to treat any piece of meat by what you SEE in it to make it the best is can be. - maybe slow cooking - maybe BBQ.
The Brazilian steakhouses are mostly take-offs on the Argentinian model which is all I ever saw in Brazil in the 1970's...the Argentinians are kinda like Texans of the 50s They BELIEVE in meat. with a fervor that borders on religion. Don't get me wrong they are very Catholic...but serious about the meat and the SAUCE! just like Texans...
The thing is - America is pretty much different when it comes to any kind of food. Our stores have labeled everything so they can get extra money for a certain percentage of it. Go figure.
If the restaurant you have gone to is authentic..odds are they buy beef in quarters and hack it up their selves - odds are it will be cooked appropriately. If not, just say you want something more tender. BTW The best flavor is NOT the tenderloin even if in America we charge more for it....Brazilian steakhouse? We ate at one for our anniversary "Cena". It was fantastic. They did what you said. They had 17 different kinds of meat (pork, beef, seafood, chicken). With that they served a very delicious mashed potatoes, Brazilian cheese bread, and a buffet bar that had all kinds of Mediterranean influence salads and soups. We had these little discs that were red on one side and green on the other. Green when we wanted for them to stop at our table and red when we wanted to stop.
They did have a menu as well with all kinds of tapas on it and desserts.
