I would like to see Switzerland (Lucerne), Germany (focus on southern Germany), France, at least the south of France like Nice, Austria possibly. Is this biting off more than I can chew in that amount of time?

How much of Europe you can see in two weeks depends on your tolerance for the trains and how much in depth you want to go vs seeing a little of a lot of places. In theory, you could take a train to a different different country every night. Not everyone finds it comfortable or easy to sleep on trains - I do and will be using the night train to go to Munich for Oktoberfest tomorrow night. Personally, I'd rather spend more time in various places and spend less time in transit.
Eurorail does not have any trains at all - they sell passes that you can use on various national railroads depending on what type of pass you buy. There are night trains on many long range routes, and I use them frequently. You need to know that you still have to make a reservation and pay and additional fee for these trains on top of the Eurorail pass. the same applies to most high speed trains and international trains. I personally will not do more than 2 nights on the train in any holiday.
And I will try to stay in each new town at least 2 full days, so I have time to really see it, and I will also try to see a second town or village in the same country, takes less time to get used to.
In a 2 week holiday I think 3 countries is the most you can take in.
